Bacon, Broccolini and Feta Pasta

If you are looking for a quick and tasty family supper, this recipe can be on the table in just twenty minutes!

Ingredients

3 thinly sliced bacon rashers

375g large shell pasta

80g frozen peas

2tbsp lemon juice

1tbsp olive oil

2 bunches broccolini that is halved lengthwise

2 thinly sliced garlic cloves

100g crumbled feta

3 thinly sliced spring onions

Instructions

1. Cook the pasta according to the packet directions until al dente, adding peas and broccoli for the last three minutes of cooking. Drain the pasta reserving 60 ml of cooking liquid and return pasta mix and reserved cooking liquid to the saucepan.
2. Place a large frying pan over medium-high heat and heat the oil before cooking the bacon for 3 to 4 minutes until crisp. Next, add the spring onion and garlic and continue to cook while stirring for another minute. Season with salt and pepper.
3. Add lemon juice, feta and bacon mix to pasta mixture and carefully combine. Divide amongst four serving bowls.
